One Eye’d Jack’s piles it on for challenges

Potter uses his father’s recipe for the One Eye’d Jack Breakfast Challenge — a plate of bacon, sausage, ham, American fries and two eggs in a basket, all covered with sausage gravy and weighing in at 7.5 pounds.

The One Eye’d Burger Lunch Challenge weighs the same — with two half-pound burger patties topped with cheese, onions, mushrooms, bacon, barbecue and onion rings, and a 3.5-pound side of fries.

“The theme is just really good food (and) more of an upbeat atmosphere,” Potter said. “Large, large portions (at) smaller prices.”

Those who can eat the entire plate of either challenge get to sign their name on the wall and receive a T-shirt that reads, “I survived One Eye’d Jack’s.” Of the nearly 400 people who have tried, about 20 have completed the challenge, Potter said.

One Eye’d Jack’s is open Sundays and Mondays from 6 a.m. to 3 p.m., and Tuesday through Saturday from 6 a.m. to 8:30 p.m. It offers takeout, delivery and seated dining for 29.
