Growing up, Chad Potter's excitement upon hearing that his father would be making "one-eyed jacks' for breakfast was comparable to Christmas morning.
"You knew you were going to eat,' Potter said.
When Potter opened a restaurant in Grand Haven's Centertown with Shanna Keur, it was all too appropriate to name it after the dish he grew up on.
One Eye'd Jack's, 207 N. Seventh St., opened its doors in early May - serving breakfast, brunch, burgers, sandwiches and pizza. It was previously Charlie Mac's.
